When creating an instance in dataverse, you can choose the region but not the exact datacenter. This can be important if you want to mirror data using Azure Synapse Link or Microsoft Fabric, as they need to be in the same datacenter. There is currently only one way to move an instance, which is to create a ticket and ask Microsoft Support to do it for you. To find out where your instance is located, you can start the wizard for synchronizing data to a datalake using Azure Synapse Link. Alternatively, you can use a PowerShell script to output the location of each instance. However, the script may not always display the correct datacenter.
